Healthy doesn't have to equal bland and disgusting!
I saw a recipe online a few days ago and decided to adapt it for dinner last night.
Ingredients:
2 Tbs. coconut oil
2 chicken breasts, cut in small pieces
1 onion, chopped
1 green bell pepper, chopped
2 apples, chopped
1/2 cup raw cashews
Directions:
Brown the chicken in the coconut oil over medium heat.
After the chicken is cooked golden brown, add in the onion, green bell pepper and apples and cook until tender (about 10 minutes).
Add the cashew pieces and cook for an additional 2-3 minutes.
Serve over cooked brown rice!
